The ground in Cantr is defined as the floor of an outside location. It contains the items you see when you click on 'Objects' on top of your character's page. Characters in an outdoor location are assumed to be standing on the ground, unless otherwise stated.

Some resources (i.e. the various types of food) are perishable if left on the ground, and the quantity will be found to diminish over time. This can be prevented by storing them in a building, vehicle, container or your inventory.
