A saddlebag is built 'on' a steed. You must mount the steed to start the project and only one saddlebag is allowed per animal.
Saddlebags allow a steed to eat hay or vegetable feed from the bag if there is no trough present. But you can store other materials, tools, and portable objects in it as well. You can build a lock on it to secure your belongings, and you can describe details about the bag in the build menu. It shows up on the objects page like an engine in a vehicle. There is an option to disassemble it, if it is empty, which will yield back the unmounted bag (but also destroys the lock in the process).
